Egg Bhurji Recipe

Ingredients ( Required For Egg Bhurji )
- 2 eggs
- 1 finely chopped large onion
- 1 small chopped tamato
- 1 chopped green chili
- 1/3 cup of finely chopped capsicum
- ½ tsp. Of garam masala or pav bhaji masala as prescribed above
- ½ tsp of ginger garlic paste
- ½ tsp. Of cumin
- Red chili powder as needed
- Turmeric as required
- Oil as required
- Finely chopped Coriander leaves for garnishing
Process of Making Egg Bhurji
#01 Break the eggs in a rinsed bowl, add salt and turmeric and beat finely. And keep aside.
#02 Add oil to a pan let it heat on medium flame. Now add cumin when it starts splutters add onions, chili and fry until golden brown now add paste of ginger garlic and fry well you will start getting mouth watering aroma.
#03 Add tomato and fry until it get soft and oil begins to separate. Add capsicum and let it fry for 2-3 minutes or wait until it get soft.
#04 Now pour eggs and scramble lightly. Keep cooking and scrambling as required. Never stop stirring to prevent burning.
#05 Add masala powder, red chili powder and coriander leaves. Stir well. Add salt and spice as required
#06 Cook well. Turn off the stove.
#07 Garnish with coriander leaves.
