Dhokla speaks for itself its popularity in India thought it is Gujarati food yet being appreciated by all of us, its texture, flavour and variation in taste make this food favourite. It is not tough to make but still it required better skill to make it soft and fluffy. The better you make its batter the spongy and soft khaman dholka you get, and the better batter of dhokla recipe required right amount of baking soda.

So let us start the recipe of this mouth watering Khaman Dhokla.

 

Khaman Dhokla Recipe

Prep time: 8 hours Cook time: 30 minutes | Serves: 3

Ingredients (Required For Khaman Dhokla Recipe)

  1. ½ cup of chana dal (gram lentils)
  2. 1 cup of rice
  3. 1 ½ tablespoons of ginger-garlic and chilli paste
  4. ½ cup of sour curd
  5. ¼ teaspoon of turmeric powder (haldi)
  6. ¼ teaspoon of baking soda or you can use ENO fruit salt ¾ teaspoons
  7. 1 teaspoon of oil
  8. ½ cup of water
  9. Salt to taste

Ingredients (Required For Tempering)

  1. 2 tablespoons of oil
  2. ½ teaspoon of cumin seeds (jira)
  3. ½ teaspoon of mustard seeds (sarso)
  4. ½ teaspoon of sesame seeds (till)
  5. 6-7 curry leaves
  6. 2 tablespoon of chopped coriander leaves

PROCESS OF MAKING KHAMAN DHOKLA

#01 Soak chana dal and rice in water overnight.

#02 Grind them with curd and water by draining excess of water until you get smooth batter in a mixer grinder. Make sure batter should neither be too thick or diluted.

#03 Transfer it to a bowl, add salt and turmeric powder and mix well. Now keep is aside in a warm place for 8 hours.

#04 Grease steamer plate with oil. Pour 2-3 glass of water at bottom of the steamer and allow it to heat over medium flame.

#05 Add 1 teaspoon of oil and ginger garlic chilli paste in batter and mix them well. Add ENO fruit salt and stir in one direction for few minutes until you get bubbles on the surface of a batter.

#06 Pour it into greased plate and fill them half of its capacity.

#07 Sprinkle cumin seeds and red chilli powder on top and place them into steamer. Steam it for 14-15 minutes over medium flame. You can check by inserting knife whether it is ready.

#08 Let it cool for few minutes and cut it into small squares.

#09 Heat 2 tablespoons of oil in a small pan. Add mustard seeds and cumin seeds, when they begin to crackle add sesame seeds and curry leaves, Sauté for 30-40 seconds.

#10 Now turn off the flame and pour it over dhokla and mix well with light hand. Transfer this delicious khaman dhokla to a serving plate and garnish with chopped coriander leaves.
