Delicious and tempting south Indian dish lemon rice prepared by adding lemon juice while stir frying steamed rice in spice. Stir frying is a Chinese cooking technique in which ingredients are fried in a small amount of very hot oil while being stirred in a wok almost the way lemon rice is prepared except the spices used in this recipe is different and its lemony yellow color gives a tongue tickling essence.

Lemon Rice Recipe

Ingredients ( Required For Lemon Rice )
- 2/12 cups of steamed rice
- 2 tablespoons of oil
- 3 tablespoons of peanuts (moongaphalee)
- 7-8 cashew nuts
- A pinch of Asafetida (hing)
- 1 teaspoon of mustard seeds
- 1 teaspoon of split black gram (urad dal)
- ½ tablespoon chana dal
- 8-9 curry leaves
- 1-2 dry red chillies
- 1-2 green chillies
- 2 tablespoon finely chopped coriander leaves
- ¼ teaspoon turmeric powder
- 1 ½ tablespoons of lemon juice
- Salt to taste
Process of Making Lemon Rice
#01 Wash and soak raw rice in water for 15 minutes. Cook it with 1 and ½ cups of water in a pressure cooker for 2 whistles over medium flame. Remove the cooker and let it cool down naturally. Remove the lid and fluff the rice with a fork.
#02 Heat 1 tablespoons of oil in a pan over medium flame; add 3 tablespoon raw peanuts and 7-8 cashew nuts. Stir fry them until they turn light brown. Now transfer them to a plate.
#03 Now add remaining oil in the same pan and add mustard seeds; when they start crackling, add a pinch of asafetida, urad dal and chana dal. Sauté until they turn light brown.
#04 Add curry leaves, dry chilli and green chilli.
#05 Sauté well for 30 seconds now add turmeric powder and mix well
#06 Add steamed rice. Add fried peanuts and cashew nuts, lemon juice and salt.
#07 Mix well and cook for 1-2 minutes. Turn off the flame, serve in a bowl and garnish with coriander leaves.
