Idli the popular south Indian cuisine and of course very healthy, there are various way of making idli. But today we will know about rava idli (suji idli), very simple to make with the combination of few dals and spices. Apart from being healthy it is quite irresistible too. Well now a days we already have ready-made instant rava idli pack available in market required adding some water only and steaming. But again nothing can take place of original taste.

So let’s start the soft and fluffy rave idli recipe.

 

Rava Idli Recipe 

Prep time: 5 minutes | Cook time: 40 minutes | Ready in: 45 minute | Serves: 2

Ingredients (Required For Rava Idli)

  1. 1 cup rava (semolina / suji)
  2. ½ teaspoon of mustard seeds
  3. ½ teaspoon of cumin seeds
  4. Pinch of asafetida (hing)
  5. 1 teaspoon chana dal (gram dal)
  6. 1 teaspoon urad dal (black split lentils without husk)
  7. 1-2 curry leaves
  8. 1 dry red chilli
  9. 6-7 cashew nuts (broken into pieces)
  10. 1/3 cup of thick yogurt (curd/dahi)
  11. ½ cup grated carrot
  12. 2 finely chopped green chillies
  13. 1 teaspoon of grated ginger
  14. 1 1/3 cup of water
  15. 2 finely chopped coriander leaves
  16. 1 teaspoon of eno
  17. 2 ½ tablespoon oil or ghee
  18. Salt to taste

PROCESS OF MAKING

#1 Heat oil in a heavy based pan, Add mustard, wait until crackle, and add cumin seed, asafetida, chana dal and urad dal. Sauté until dal turns light brown. Now add curry leaves, dry red chilli and cashew nuts and sauté for 40 second.

#2 Now add rava and mix it well. Roast it on medium flame until it turns light brown, keep stirring continuously to avoid burn. Turn off the flame and transfer it to plate to cool down.

#3 Now prepare mixture of curd, chillies, ginger and salt in a large bowl.

#4 Add roasted rave and water and mix well to get thick smooth batter without any lumps.

#5 Add carrot and coriander leaves and mix. Keep the batter aside for 14-15 minutes.

#6 Pour 2 glasses water in steamer and heat over medium flame. Grease idli molds with oil. Add eno in batter and stir well.

#7 Now pour batter in greased molds and steam it on medium flame for 14-15 minutes. Avoid heating on high flame.

#8 Turn off the flame and remove mold from steamer. Remove prepared idli after it cools down.

#9 Here you are ready with instant rava idli. Serve with coconut chutney or sambar.
