Broccoli Soup Recipe (Cream of Broccoli Soup)

Ingredients ( Required For Broccoli Soup )
- 2 tablespoons of unsalted butter
- 3 cups of butter
- 1 chopped onion
- 3 tablespoons of all purpose flour
- 3 cups of chicken broth
- 8 cups of broccoli, cut into florets, stems peeled and chopped
- 1 chopped stalk celery
- Ground black pepper and salt to taste
PROCESS OF MAKING
#1 Melt 2 tablespoons butter in medium sized pot over medium flame. Now add onion and celery and cook until softened, stir occasionally, cook for ten minutes.
#2 Now add all purpose flour and stir to combine well, cook for 1 to 2 minutes.
#3 Now add chicken broth with one cup of water and bring to boil over high flame (remember to whisk constantly) reduce the heat and let it simmer for 10 to 12 minutes.
#4 Now add chopped broccoli and cook and simmer until it get tender, cook for 18 to 20 minutes.
#5 Transfer the above prepared stuff into a blender, fill the bender halfway and puree until smooth, allow it to cool down for a while, now remove the cap from the in lid, cover lid with folded kitchen towel and hold down firmly while blending.
#6 Now transfer the soup puree to a pot. If you want you can thin it with water.
#7 Add cream and heat over medium until warmed through. Season with salt and pepper.
